Breakfast of Champions

It’s cold here (for Northern California) and I’ve been biking a lot, and it’s just time for warm comfort food. This is what I ate for breakfast today. Try it for anytime–breakfast, lunch, or dinner. Your eyes might roll back in your head and you might even try to lick the plate.

Take a bunch of Swiss chard, wash it, and chop it. Sautee some chopped garlic in a pan with a tablespoon of olive oil. Throw in the wet chard, season with salt and some red pepper flakes, and sautee. Cover, turn heat to medium and cook until wilted. Drizzle in some heavy cream and grate in some Parmesan. Cover and cook some more. Finally, for total decadance, crack an egg over the chard, cover, and poach until the white is set and the yolk is still a little runny. Dump in a bowl and eat.

I promise, this will cheer you right up. It’s soooo good. And it makes me wonder: What if more Americans ate vegetables to satisfy their cravings instead of fast food? What if more of us cooked? A tablespoon of cream is doubtless better for you than a bunch of additives and preservatives. This is the kind of thing you can throw together when the pantry is skint. It’s healthy. It’s inexpensive. It sticks to your ribs. Cook it for a friend who says they hate vegetables and see if it’s still true after the first bite…. Or better yet, cook it for yourself and lick the bowl when you’re done!
